A filling and high protein, nutritious, gluten free salad recipe with nuts and seeds that even children love. Easy to make. 

Ingredients

1 cup foxtail millet (Tamil: Thinai / Telugu: Kirra / Malayalam: Thinna / Kannada: Navane/ Hindi: Kangni)
¼ cup diced onions

2 tbsps of pine nuts (any available nut such as almonds, walnuts, pistachios etc can be used.)

1 tbsp flax seeds

¼ cup sundried tomatoes (finely chopped)

¼ cup of olives (green or black) finely chopped

Salt to taste

Pinch of black pepper

2 tbsps of Italian seasoning dried

Some fresh basil leaves

Method

On medium gas, put a nonstick pan on and add olive oil along with onions and pine nuts to sauté till golden brown. Add in the salt, pepper and seasoning. Stir in the olives, sundried tomatoes and flax seeds.

In another pan, boil water and add the millet to cook for 10 minutes.  Once the millet has boiled, strain the water and add it to the mixture in the pan. Garnish with fresh basil leaves.

Nutritional Value of Millet Salad

Foxtail Millet is a small round grain, rich in Vitamin B, protein and fiber. It is easy to digest and helps ease constipation and even regulate glucose levels in the body for persons with diabetes. India is one of the largest producers of millet, making it cheap and easily available.
